What do you do when you open the pantry and discover that you don't have quite enough polenta left to make for dinner? You pull out a couple of cans of canned corn and puree them in the blender. Then you use them for the liquid in your polenta and suddenly "not enough" becomes plenty of delicious, sweet, creamy (without cream) polenta. This technique was born of necessity but we will continue to play with it because it's delicious.
