There's cheese steak on the menu tonight. Alex kind of laughs at me as I carve up the leftover rib roast, carefully removing all the fat and gristle from the cap and the center cut before handing them off to him so he can slice it and do his thing. Totally worth it though. I hate biting into a great sandwich and snagging my teeth on unpleasant, chewy bits. It ruins the whole experience. If you're going to do it at home, you have the opportunity to do it right. That way you can savor each bite.
