The upcoming Fastnacht Day re-kindled my desire to make a potato doughnut. The inquiries about whether or not we were going to produce them provided the creative kick in the ass I needed to make it happen. Our potato doughnuts utilize instant mashed potatoes. The potatoes add a softness to the dough and allow us to increase the amount of moisture. We use the dehydrated potatoes for both consistency and efficiency.
The doughnuts have a pillow-y texture with a gentle chew and an alluring moistness. The creative catalyst was Fastnacht Day. But now that we have the doughnuts dialed in, they will become a staple at Curiosity Doughnuts.
