I was reading through Rich Table by Sarah & Evan Rich when I came across a tip for using a rolling pin to pound out pork chops. It was a great idea because everybody has a rolling pin in their kitchen. We tried it out and it works beautifully and it's fast. We utilized our quarter sheet pans for our breading station. They are the perfect size for the large pieces of meat. It made the whole process feel streamlined. It's the small modifications that make a process flow.
