Sometimes you feel the need for chocolate and whipped cream. At those times, there's nothing better than a Chocolate Cloud Cake.
It's an easy recipe and as long as you use good butter and chocolate, it yields something rich and luxurious, with multiple textures, to be enjoyed in small bites. I added 1/3 teaspoon of fine sea salt to the sugar that I added to the whole eggs, and I used cookie crumbs on top instead of chocolate shavings. Other than that, I followed the recipe as written. It comes from Richard Sax's book, Classic Home Desserts, which is wonderful. If you like to bake, it is a book worth checking out. It's been a staple in our library for years, one that I return to again and again.
