Alex is not a fan of graham cracker pie crusts and always complains when I make one. In The New Pie: Modern Techniques For The Classic American Dessert, they roll a pie crust in graham cracker crumbs to make key lime pie. When we saw it, we were both struck by the simplicity and the possibilities. It was a total a-ha! moment here. I used it to make a Two Lime Pie for someone's birthday here and we both loved the way it worked out. The crumbs added texture and flavor to the finished pie dough, making it more crunchy on the outside and seemingly more tender inside the crust. Now we are contemplating the many different kinds of crumbs we can use to make pie dough. We'll never have to deal with a crumbly crumb crust again.
