It has taken me too many years to appreciate and begin to understand the skewer. It has allowed us to increase surface area, create bite size pieces, decrease cooking time and allow for more flavor coverage. We should have been skewering for years. Thankfully we are open to daily learning and realizing that what we don't know is a vast playground for ideas.
