Our pumpkin doughnut is built on our new fashioned doughnut model. Originally I thought our cinnamon cardamom sugar would be the right coating for this. But the flavor of the doughnut, with its distinct spices, did not need additional aromatics. I landed on simple granulated sugar. The interior pumpkin flavor shines and the sugar adds a delicate sweetness and a crunchy texture. It is not what I planned to do. It is what the doughnut needed.
